Please cherish every moment of summer. I mean, the freshest produce we long for all winter is finally here. Although June in Estonia hasn’t been the kindest, things are still looking pretty good and fresh at the farmers markets. A few weeks ago, my friend and I did a quick farmer’s market run, and pretty much lost our heads. Four kilograms of strawberries, two kilograms of cherries, watermelons, cucumbers, tomatoes… The works.
But these smoothies at hand are a beautiful mix of fresh strawberries, rhubarb and bananas. Recipe here:
1 ripe banana
2 cups of fresh strawberries
2 cups of apricot yoghurt
Topped off with chia seeds and strawberries
I was super skeptical about the rhubarb tasting good in the smoothie. I mean strawberries and bananas are a no-brainer… But raw rhubarb is sour and I’ve ruined some damn good smoothies with sour kiwis… But I did it. And wow, was I pleased with the outcome. The taste wasn’t as bland as it would have been without it and rather gave it that extra sourness and kick that it needed. And obviously it wasn’t as sweet so I didn’t feel sick half way through!
So if you can get a hold of some rhubarb, definitely try it! But make sure, that you use some sort of sweetened yoghurt or honey if you want to use natural yoghurt. It makes the smoothie a lot more enjoyable!
